I recently bought a bag of Harina de Maiz (precocida) thinking I was buying corn flour but it turned out not to be the cornflour I usually use to thicken sauces. After a bit of research on the net I found out the difference and thought this information might be useful to others living here. Maizena is a brand, it is a very fine cornflour. Harina de maiz it is very different, is for the preparation and cooking of latin american foods such as tamales, hayacas, arepas and others. It can be white, or yellow. Maizena harina fina de maíz is only the gluten from the maiz. Maizena harina de maiz = cornflour Harina de maiz is whole maiz pre cooked = cornmeal Hope this is useful to you all.
