The cheaper the food is, the more likely it is that it will contain a lot of additives and padding. You're right, there should be little or no carbohydrate in pure meat like ham. If it's processed in the form of chorizo or fuet you may get some.
Just got to check the packaging to find out what is contained within what you are buying. If there's no inforamtion on the pack (I've noticed that on a few products) then I don't buy.
Where are you shopping?

The best places I go to for all my meat (and don't laugh) are Aldi and Lidl. I always seem to get a good cut at the butchers at Lidl and the pre-packed meat in Aldi (the turkey sausages especially) is pretty much 100% meat and very tasty.
