How? Total ignoramous, but would like to serve some on NY eve - whcih type to buy? What to serve it with?
Serve wIth onion or fig chutney ("confiture d'oignons/de figues"), toasted bread (possibly with figs, or "pain d'épices spécial foie gras"), and with a sweet white wine (Sauternes, Loupiac, Montbazillac, Coteaux du Layon).

It's a bit of a conundrum. Officially, it is served with a sweet wine, the ultimate being, Château d'Yquem. However, Foie Gras is very rich and, personally, I cannot stand it with sweet wine, as I feel that it needs something that cuts through the richness. I always serve it with champagne, or a very good Cremant de Bourgogne.
Also lovely with slices of kiwi fruit and granny smith apples instead of bread
