What's the best French flour to use for shortcrust pastry? Thanks in advance

I use farine de blé which is the equivalent to plain flour. Use farine de gâteaux if you prefer self raising flour. Hope this helps.
type 45 for biscuits and 55 for pastry I find best
The cheapest flour type 45 is the best for short crust as it does not have any gluten which makes pastry tough ,type 55 is stronger as the numbers increase so the flour is suitable for choux paste etc.
Type 45 flour is not gluten free.... this interesting info is from the Shipton Mill website
