I use farine de blé which is the equivalent to plain flour.  Use farine de gâteaux if you prefer self raising flour.  Hope this helps.

The cheapest flour type 45 is the best for short crust as it does not have any gluten which makes pastry tough ,type 55 is stronger as the numbers increase so the flour is suitable for choux paste etc.

Type 45 flour is not gluten free.... this interesting info is from the Shipton Mill website

French flour type 45:   To be used for making fine puff pastry, this is a classic example of a “Farine Supérieure”...

Typically
made only from the innermost parts of the wheat berry the flour
produced is the finest and most suited for making a wonderful elastic
dough.. In French flours the smaller the number the whiter the flour,
the number Type 45 being an indication of the amount of ash present.
