Can anyone help?I wish to make salt beef. All the recipes I have give the meat requirement as brisket of beef. This translates as poitrine de boeuf, which is unknown to the three butchers I have spoken too. Does anyone know the cut /joint of beef that I can use for making salt beef and more importantly the name in French. Thank you all in anticipation.
